Hi guys! I hope you are all well. I finished my exams last week and I have just been eating my face away, so I decided to share a recipe with you guys. I have pancakes every Saturday for breakfast and I like switching it up from the normal plain pancakes, every now and then. Today, I opted for red velvet pancakes but they turned out pink but still tasted amazing! Enjoy.

- 200g wholemeal flour
- 250ml milk
- 150ml water
- 1 tbsp baking powder
- 3 small eggs (or 2 medium eggs) slightly whisked
- 1 tbsp olive oil
- 1 pinch salt
- 2 tbsp sugar
- 4 small beetroots (boiled)
- Dark cooking chocolate 

- Put the beetroots, water and milk in a blender and blend. Then, place aside.
- Melt some of the dark cooking chocolate (I used Green and Black's) in a small pan and also set aside.
- Pour the wholemeal flour, baking powder, salt and sugar in a bowl and mix together. 
- Make a well in the dry ingredients and pour in the wet ingredients. Whisk until you have a smooth batter.
- Fry for about 2-3 minutes on each side on a lightly greased pan, on medium heat.

- I don't think I used enough dark chocolate, hence the pinkness.
- You can vary the amount of milk and water you use, depending on the consistency you want.
- Serve with Maple syrup and whatever fruits you like.
- This recipe served 2 hungry girls.
